

Scones with Jam & Cream

Perfect for afternoon tea, these Scones with Jam & Cream fortified with AdVital Powder are high in protein and provide a good source of Vitamin D and Calcium.

Directions
Scones
1Preheat oven to 220°C conventional/195°C fan forced and lightly grease and flour a baking tray.
2Sift flour, sugar and salt into a large bowl and make a well in the centre. In a separate bowl whisk AdVital Powder, cream and lemonade until smooth.
3Pour the wet ingredients into flour mix. Mix with a knife until it comes together. Turn onto a lightly-floured surface. Handle the dough as little as possible to prevent chewy scones. Knead gently until smooth and roll to an even thickness of 2-3cm. If the mixture is too sticky gently work in extra flour; if it is too dry sprinkle over a little extra lemonade or water and work in gently.
4Cut scones into 5-6cm rounds. Place close together on prepared tray. For golden brown tops, brush with a little milk.
5Bake 10-15 minutes or until golden and cooked through.
Whipped Cream
1Whisk cream and AdVital Powder until smooth and thick. Keep refrigerated until required.
2Serve warm scones with cream and jam.
Recipe Notes
Hints & Tips
- Dip your scone cutter in flour after cutting each scone to stop sticking. As you cut out your scones avoid twisting the cutter as this will make the scones rise unevenly.
- For a crusty top, cool on a wire rack. For a softer top, wrap them in a tea towel straight from the oven.
