Vibrant Mashed Orange Veggies fortified with AdVital is high in protein and provides a good source of Vitamin D and Calcium.

  • Yields: 4 serves

Ingredients

200g peeled, diced potato

200g peeled, diced sweet potato

200g peeled, diced pumpkin

3 scoops AdVital

Salt and pepper, to taste

Directions

1Place all vegetables into a large saucepan, cover with water, bring to the boil and simmer for 15-20 minutes or until very tender but not falling apart.

2Drain vegetables well in a colander. Stand for approximately 10 minutes ensuring all excess moisture is gone.

3Mash.

4Add AdVital, beat with a wooden spoon until smooth. Season to taste and serve.

Variation: Duchess Potatoes

1Pipe into high mounds on a lined and greased oven tray.

2Glaze with 1 tsp beaten egg.

3Bake for 10 minutes at 200°C.

Hints & Tips

  • Add cheese or cream to make a richer mash.
  • Garnish with finely chopped parsley or a sprinkle of cumin.
