Lemon & Blueberry Muffins

Delicious Lemon & Blueberry Muffins fortified with AdVital Powder are high in protein, energy dense, and provide a good source of Vitamin A & D.

1Adjust an oven rack to the centre position and preheat the oven to 200°C conventional/180°C fan forced. Prepare a 12-cup (⅓-cup capacity) muffin tin by greasing lightly or lining with muffin cups.
2In a large bowl, combine AdVital Powder, eggs, sour cream, milk, lemon essence and sugar, whisk until smooth.
3Sift the flour into the wet ingredients, add berries and fold until just combined.
4Divide mixture among 10 muffin cups. Bake for 18-22 minutes or until a skewer inserted into the centre comes out clean.
Hints & Tips
- Serve with whipped cream (refer to Scones with Jam & Cream Recipe) or spread with cream cheese (refer to Cream Cheese Recipe) or butter.
- Substitute blueberries with any other berries or seeds you enjoy.
