Wholesome Banana Bread fortified with AdVital is high in protein, energy dense, and provides a good source of Vitamin A & D.

Ingredients

1⅓ cups (195g) self-raising flour

1 tsp ground cinnamon

100mL (90g) butter, melted

⅔ cup, firmly packed (105g) brown sugar

1½ cups (360g) overripe bananas, mashed

2 (59g each) eggs

5 scoops (200g) AdVital

1½ tsp (15mL) vanilla extract

¼ cup (65mL) full cream milk

Directions

1Preheat oven to 180°C conventional (160°C fan-forced). Lightly grease an 11cm x 21cm (base measurement) loaf pan with melted butter or cooking spray. Line base and two opposite sides with baking paper, allowing it to overhang.

2Sift combined flours and cinnamon into a large bowl. Stir in sugar, then make well in centre.

3Place AdVital, milk, eggs, melted butter and banana in a medium bowl, and stir until well combined.

4Add banana mixture to flour mixture and stir until just combined. Spoon mixture into the prepared pan and smooth the surface.

5Bake in preheated oven for 60-70 minutes or until skewer inserted into centre comes out clean.

6Remove from oven and allow to cool in pan for 5 minutes. Turn onto a wire rack to cool completely. Cut into slices to serve.
